-Cut zucchini, halved lengthwise, then sliced
crosswise into 1/2 inch half moons and put aside
-Cut onion, halved crosswise, then cut lengthwise
into 1 inch sections and put aside
-Cut chicken into chunks and put aside
-In large bowl, whisk dijon mustard, vinegar and
italian seasoning
-In same bowl, whisk in 2 tbs. EVOO
-Take out a little marinade and put in a medium bowl
-Put chicken in the large bowl and coat, marinate 30
minutes
-Whisk 2 tbs. EVOO, salt and pepper and the extra
marinade from medium bowl
-Add zucchini into medium bowl
-Add onion into medium bowl
-Toss to coat
-Season chicken with salt and pepper
-Put all food on skewers
-Grill on high, covered for about 3 minutes
-Flip and grill about 5 minutes more and serve
