     BLT Wedge Salad

Ingredients
4 slices thick cut bacon, diced
3 tbsp tomato paste
2 tbsp white wine vinegar
2 tbsp sour cream
1 tbsp minced shallot
1 tbsp chopped fresh terragon
1/2 tsp sugar
1/3 cup evoo
salt and pepper
 
1 head iceberg lettuce, cut into 6 wedges
1 c cherry tomatoes, quartered

Instructions
Cook the bacon until crisp. Transfer to a paper towel lined plate. Reserve the drippings.
Make the dressing- combine tomato paste, vinegar, sour cream, shallot, tarragon, sugar and 1 tbsp bacon drippings in a medium bowl; whisk well. Add the evoo slowly while whisking until emulsified. Whisk in 2-3 tbsp water to thin. Season with salt and pepper.
Arrange iceberg wedges on platter and drizzle with dressing. Top with tomatoes and bacon.
