     Chicken - Vegetable Chili

Ingredients
1 (16 ounce) package frozen chopped bell peppers and onions
2 Tablespoons minced garlic
2 Tablespoons chili powder
1 Tablespoon ground cumin
2 pounds boneless, ckinless chicken breast halves, cut into small pieces
2 (14 ounce) cans chicken broth
3 (15 ounce) cans pinto beans with jalapenos, divided
 

Instructions
Cook bell pepper sand onions with a little oil in skillet for about 5 minutes, stirring occasionally. Add garlic, chili powder, cumin, chicken, broth and a little salt. While stirring, bring to a boil. Cover and simmer for 15 minutes. Place 1 can beans in shallow bowl and mash with fork. Add mashed beans and remaining 2 cans beans to pot. Bring to a boil, reduce heat and simmer for 10 minutes.
