     Seitan Salad Sandwiches

Ingredients
4 ounces seitan, diced
1/4 to 1/2 of a small apple, cored and diced
1/4 tsp. fresh lemon juice
1 small scallion, thinly slice
1 Tbl. raisins
1 Tbl. slivered almonds
1 to 2 tsp. minced fresh parsley
1 to 2 tsp. sweet pickle relish
1 Tbl. vegan mayonnaise
 
2 tsp. ketchup
1 tsp. mustard
1 pita, cut in half
Shredded romaine lettuce (About 2 leaves)

Instructions
Place all the ingredients, except the lettuce and the pita, in a medium bowl. Gently stir to combine. Warm the pita halves in a dry skillet. Spoon the filling into the pocket and add the lettuce.
