Preheat over to 400 degrees F. To prepare potatoes, scrub potatoes with soft vegetable brush under running water; rinse well. Pierce each potato in several places with fork. Bake 1 hour or until fork-tender. Cool completely, then refrigerate.

When potatoes are cold, peel with paring knife. Grate potatoes by hand with large section of metal grater or use food processor with large grater disk.

Heat butter in 10 inch skillet over medium-high heat until melted and bubbly. Press grated potatoes evenly into skillet. (Do not stir or until potatoes.) Season with salt and pepper to taste. Cook 10 to 12 minutes until golden brown.

Turn off heat; invert serving plate over skillet. Turn potatoes out onto plate. Garnish, if desired. Serve immediately.
