Stir together 2 pints blackberries, sugar, orange zest and ground ginger in saucepan over medium heat, stirring constantly for 5 minutes or until thoughly heated.
Layer bowls with French vanilla ice cream and warm blackberry sauce. Top with a dollop of whipped cream, crumbled gingersnap cookies and fresh, cold blackberries.
