     Seafood Stuffed Halibut

Ingredients
6 ounce halibut fillets
1 cup shrimp, chopped
1 cup scallops, chopped
1 cup crab, chopped
1/4 cup Parmesan cheese
1/2 panko bread crumbs
3 tbl mayonnaise
1/2 cup white onion, minced
1/2 cup celery, minced
 
1 egg
1 tbl dijon mustard
salt & pepper

Instructions
Mix everything except the halibut together to make the stuffing and check the seasoning. Set aside to chill.
Season the fish and make a slit in the center. Fill with the stuffing and pat stuffing into the fish. Drizzle with lemon butter.
Bake at 350 degrees for 25 minutes or till the internal temperature is about 160 degrees.
Drizzle reminder of warm lemon butter over the top and serve.
