     Potato Souffle

Ingredients
2 2/3 cups dry instant mashed potatoes
2 eggs, beaten
1 cup shredded cheddar cheese
1 (3 ounce) can fried onions
 

Instructions
Preheat oven to 350 degrees. Prepare mashed potatoes according to package directions. Fold in beaten eggs and cheese and stir well. Spoon into sprayed 2 quart baking dish. Sprinkle with fried onions. bake uncovered for 20 to 25 minutes.
