     Black - Eyed Pea Rice

Ingredients
1 cup rice
1 onion, chopped
3 Tablespoons butter
2 (15 ounce) cans black - eyed peas
 

Instructions
Cook rice in 2 cups boiling, salted water according to package directions. Saute onion in butter. Add black - eyed peas and heat thoroughly. Serve peas over rice.
Tip- Add 1 cup cooked, chopped ham to make a heartier dish.
