1.) Saute onions in 1 tbs of butter and put aside.
2. On medium heat cook 1/4 cup butter and flour. Whisk until blended well.
3.) Add half and half and chicken stock.
4.)Simmer for 20 minutes.
5.) add carrots, onion and broccoli.
6.) Cook for 20-25 min.
7.) Blend soup in blender.
8.) Place back into pot and add cheese.
9.) Cook on low until cheese is fully melted.
