     Fried Chicken Breasts

Ingredients
4 - 6 boneless, skinless chicken breast halves
2 eggs, beaten
30 saltine crackers, finely crushed
 

Instructions
Pound chicken breasts to 1/4 inch thickness. (If chicken breasts are very large, cut in half.) In shallow bowl, combine beaten eggs, a little salt and pepper and 3 Tablespoons water. Dip chicken in egg mixture and then crushed crackers to coat well. Deep fry until golden brown. Drain on paper towels.
