     Tomato Basil Soup

Ingredients
1 lg can whole tomatoes
4 c. 100% tomato juice
fresh basil (about 1/4 cup packed)
1/2 c. heavy cream
salt and pepper to taste
 

Instructions
In a large pot, combine the can of tomatoes and the tomato juice. Simmer for 30 minutes. Once juice and tomatoes have simmered, turn off the heat, add basil leaves and blend until smooth (immersion blender works best if you have one). Once smooth, slowly drizzle and stir in cream until desired creaminess. Season with salt and pepper to taste.
