     Black Bean and Corn Salsa

Ingredients
1 can black beans, drained and rinsed
1 can corn or corn taken off 2-3 cooked corn cobs
lg handful cilantro, chopped
1/2 red onion, finely chopped
1 garlic clove, finely chopped and then smashed into garlic paste
salt and pepper to taste
olive oil
red wine vinegar or apple cider vinegar
 

Instructions
Combine beans, corn, cilantro, red onion and garlic. Salt and pepper to taste. Add olive oil and vinegar - just enough to taste, do not make it soupy. Refrigerate before serving.
Good on tacos or just with tortilla chips!
