     Springtime Paella Primavera

Ingredients
2 1/2 teaspoons olive oil
1 red bell pepper, chopped
1 cup sliced green onions
3 cups veggie broth (low sodium)
3 garlic cloves, minced
1 cup yellow rice
3 cups broccoli florets
1 cup fresh or frozen baby peas
1 cup cherry tomatoes, halved
 
12 green olives, halved
12 black olives, halved
1 lemon, cut in wedges
1/4 cup fresh parsley

Instructions
Heat oil in a large nonstick skillet over medium heat. Add bell pepper and green onions; cook 5 minutes. Stir in broth, and garlic. Bring to a boil. Sprinkle rice over ingredients, reduce heat to medium low, and simmer covered for 10 minutes. Sprinkle broccoli, peas, tomatoes, and olives over rice. Cover, and cook paella 8 minutes, or until rice is tender. Remove from heat and let rest covered, about 5 minutes. Season with salt and pepper if desired. To serve, spoon paella into 6 bowls. Garnish each with a lemon wedge and parsley.
Serving Suggestions
Rice may require longer cooking. Add time as needed
