In small bowl combine paprika, cumin, cayenne pepper, coriander, oregano and 1 teaspoon salt. In large shallow baking dish, place chicken pieces and drizzle with a little olive oil to coat. Rub each piece with spice mix and let stand about 10 minutes. Heat large skillet over medium high heat and brown chicken pieces. Reduce heat, cover and simmer about 10 minutes on each side.
