     Irish Chicken

Ingredients
1 (2 1/2 pound) chicken, cut into serving pieces
1 egg, beaten
1 1/2 cups dry instat potato flakes
2 Tablespoons butter
 
Instructions
Preheat oven to 375 degrees. Dip each chicken piece in egg and roll in potato flakes. Repeat with all chicken pieces. melt butter in shallow baking pan, place chicken in pan and bake for 30 minutes. Turn chicken over and bake for additional 20 minutes.
