2 Tbsp olive oil

1/2 cup minced white onions

1/2 c. thinly sliced carrots

2 ribs of celery minced
|
|
1/4 c. french cut green beans
|

4 cups vegetable broth
|

1 (15 oz) can light red kidney beans
|
|
1 (16 oz) can tomato juice
|
|
1/2 tsp dried oregano
|
|
|

1/4 tsp black pepper
|
|
1/2 tsp dried basil
|
|
1/2 tsp minced garlic
|
|
1 bay leaf
|
|
1/4 tsp salt
|
|
2 Tbsp parsley
|
|
3 cups hot water
|
|
1 cup small shell pasta ( cooked)
|
|
1 lb. country style sausage (browned)

Instructions |
|
|
Heat olive oil over med. heat in a large soup pot. Saute onion, garlic,
celery, green
beans, and carrots in oil for 5 mins.

Add vegetable broth, tomato juice, kidney beans, hot water and spices to
pot. Bring
soup to a boil, then reduce heat and allow to simmer for 20 mins.
|
|
|
Add pasta and sausage and cook for an additional 20 mins or until
desired
consistency.
Remove bay leaf before serving.

You can add a sprinkle of parmesan cheese to each soup bowl as it is served.
