1. In a small baking dish toss together salsa ingredients. Place in a 450 degree oven for 15 minutes, or until caramelized. Transfer to a blender and puree.
2.Beat eggs in a small bowl, then cook lightly for a minute in a small amount of hot oil.
3.When eggs are almost cooked, remove from heat and combine with cheese, a pinch of salt and some chili flakes.
4.Place tortillas on a sheet pan, spread half of the egg and cheese mixture on each tortilla.
5.Then fold them over, brush lightly with canola oil and bake at 450 degrees until golden and cheese is melted (about 10 mins.)
6.Cut quesadillas into fourths and serve with salsa and a garnish.
