     Egg & Cheese Burrito

Ingredients
1 flour tortilla (6 inch)
1 egg, beaten or egg-beaters
1 Tbl. shredded Mexican cheese blend
1 Tbl. salsa
 

Instructions
Place tortilla into cereal bowl,lined with a paper towel. Add beaten egg into center of tortilla (I used egg-beaters).
Microwave on high for 30 seconds. Stir. Microwave on high again until egg is almost set, 15 to 30 seconds longer.
Remove tortilla to flat surface. Top egg with cheese and salsa. Fold in bottom and sides and serve.
212 calories per serving, 10g fat, 375 mg sodium, 15g fiber.
