1/2 cup shredded low-fat cheddar cheese (shred yourself)
cups veggies, finely chopped (choose from seasonal veggies like mushrooms, onion, bell peppers, etc
Instructions
1.Preheat oven to 350 degrees F.
2.In a large mixing bowl, beat egg, sea salt, black pepper and
chopped garlic.
3.Stir in veggies and cheese.
4.Spray 6 slots of a muffin tin with organic olive oil spray, or use
silicone muffin pan.
5.Divide egg mixture evenly between the six muffin slots.
6.Bake for 25-30 minutes.
7.Allow to cool for 5-10 minutes before removing from pan.
8.Enjoy
