     Baked Seitan Loaf

Ingredients
1/2 c. cooked or canned white beans, rinsed and drained
1/4 c. soy sauce
1 Tbl. olive oil
1 1/4 c. vegetable broth
2 c. wheat gluten flour (vital wheat gluten)
1/3 c. nutritional yeast
2 tsp. onion powder
1 tsp. garlic powder
1/2 tsp. salt
 

Instructions
Preheat the oven to 350F. In a food processor, combine the beans, soy sauce, oil, and broth and blend until smooth. In a large bowl, combine the flour, yeast, onion powder, garlic powder, and salt. Mix to combine. Stir the wet mixture into the dry mixture to make a soft dough. Knead for 3 minutes, then shape into an oval loaf. Place the loaf on an oiled sheet of foil and enclose it in the foil. Place the loaf on a 10-inch baking pan. Add an inch of water to the baking pan and tightly cover the entire pan with foil. Bake until firm, about 1 hour and 45 minutes.
