     Alfajores (From Argentina)

Ingredients
1 cup cornstarch
1 cup flour
1 tsp. baking powder
12 Tbsp. unsalted butter
3/4 cup sugar
2 egg yolks
1 cup dule deLeche
Dule de Leche-
 
4 cups whole milk
1 1/4 cups sugar
1 tsp. vanilla
1/4 tsp. baking soda

Instructions
Sift together all of the dry ingredients. In a mixer bowl beat sugar and butter until light and fluffy. Add the egg yolks and beat them until they are incorparated. Reduce mixer speed to low and slowly add in the dry ingredients. Form the dough into a disc and let refridgerate for one hour. Preheat oven to 350 degrees. Take out dough and roll out to about 1/3-inch thick. Cut out 2-inch disc and place on a greased cookie sheet. Bake for 9 - 10 minutes but not so long they get brown. Let cool for two minutes then move to a wire rack and cool completely. Then spread 2 tsp. of Dule deLeche on one cookie.
Dulce deLeche - Add all ingriedents to a heavy bottomed sauce pan and stir well to dissolve all the sugar. Set the heat on low and simmer stirring frequently until mixture is carmalized. Transfer to a clean jar and refridgerate
