Ingredients
2-3 leeks
1 large beetroot
2-3 zucchini squashes
2-3 eggs
4 tablespoons oats
4 tablespoons of flour/gluten free is fine also
3 tablespoons breadcrumbs/also gluten free is good
salt, pepper, cumin
oil for frying
 
3 tablespoons Tehini (you can leave out if you dont have but it adds protein and taste

Instructions
I parboil the leeks very quickly. Grate all vegies either by hand or machine. Add all other ingredients and mix up. You can do this in the machine or by hand.
Place in fridge for half an hour. If way to drippy, add some more oats/flour/breadcrumbs. Heat oil in a skillet. Drop a tablespoon of patty mix (too soft to form by hand is how it should be)into oil according to desired size. Make sure both sides get their share of frying! Can freeze and reheat in oven.
Great with yougurt or cottage cheese or plain. Healthy and excellent for Rosh Hashana or Hanukah. Cool color.
