     Jamie Oliver’s Fish

Ingredients
1 big fish or 2 medium fish per person seasoned with salt and pepper. Use St Peter if you can.
Spring onions roughly chopped (in halfs)
artichoke heart (mini or big) - the preserved in cans are good
baby tomatoes ~ 500g - cut them in half
200ml of white wine or water
 

Instructions
Season the fish with a pinch of salt and pepper. Heat a pan, add olive oil and the following- spring onions; artichoke heart; baby tomatoes; black olives; 200ml of white wine or water. Let it boil for 5 - 10 mins, it will thicken a bit. Time to add the fish. Cover the pan, cook for 10 mins - check if fish is cooked (has to be juicy, not overcooked). Serve with salad or white plain rice and wine! Bom apetite!
