     Italian Stuffed Peppers

Ingredients
6 to 8 orange bell peppers
EVOO
1/4 cup minced red onion
1/4 cup minced red pepper
3 tbs minced garlic
2 lb mild italian sausage, casings removed
2 cups mascarpone cheese or cream cheese
1/4 cup grated parmesan cheese
Salt and pepper
 
1/2 cup shredded mozzarella cheese
Minced chives

Instructions
-Preheat oven to 300 degrees -Cut each pepper into 4 boat like pieces -Put peppers on baking sheet and roast 5 minutes -Remove from heat and let cool
-Heat EVOO in large pan -Add onions, peppers, garlic and sausage until browned
-Remove and put in large bowl -Add mascarpone and parmesan cheese -Mix and season with salt and pepper
-Scoop into peppers -Top with mozzarella cheese -Bake 5 minutes to melt cheese and garnish with chives
