     Zucchini Feta Flapjacks

Ingredients
3 cups grated zucchini (about 1 1/2 lbs)
1/4 cup finely crumbled feta cheese
2 eggs plus 1 egg white, lightly beaten
3/4 cup whole wheat pastry flour
3/4 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried oregano
olive oil cooking spray
 

Instructions
Squeeze zucchini firmly to remove excess liquid. Transfer to bowl and mix with feta, eggs, flour, baking powder, salt, pepper and oregano. Blend well. Heat wide frying pan over med-high heat. Coat with cooking spray. Add 3 Tbl mixture for each pancake. Spread to make 4 inch circles. Cook about 3 minutes per side, turning once, until golden brown.
