For Poaching Chicken- 1 pound boneless chicken breasts, pounded thin
1 cup semi sweet white wine
Pesto- 1 1/4 c basil
1 c olive oil
1 1/2 tsp salt
1 tsp black pepper
4 cloves garlic, minced
1/2 tsp sugar
Salad- lettuce
grape tomatoes
pine nuts
Instructions
Place wine in a medium skillet over high heat and
bring to a simmer.
Place chicken in wine and cook until just turns
white and is cooked through- about 5 minutes per
side.
Blend dressing with an immersion blender. Remove 1/2
cup dressing and set aside. Marinate chicken in
remaining dressing in the refrigerator for at least
an hour.
Remove chicken from marinade and discard marinade.
Slice chicken into thin strips.
Assemble salad and pour 1/2 cup dressing over salad.
