1 1/2 lbs tomatoes

2 bunch green onions
|

1/2 red onion

small bunch fresh basil

2 tbsp balsalmic vinager
|

2 tbsp orange juice

4 - 5 tbsp olive oil

salt, pepper, sugar

Instructions |

|
Cut tomoatoes into bite size pieces. Finely chop red onion. Cut green onion diagonally. Cut up fresh basil. Mix together.

In a cup mix olive oil, balsamic vinegar, and orange juice. Add pinches of salt, pepper and sugar to taste.

|
Pour dressing over salad and mix. Serve cold.

|
I use cherry tomatoes and cut in half. You can mix and match tomatoes. It is a great way to use many tomatoes at peak harvesting season.
