     Waffle's

Ingredients
1 pkg active dry yeast
2 c whole milk
1 tsp vanilla
2 c flour
1/4 c sugar
1/4 tsp salt
1/2 c melted butter
3 eggs seperated
Infused Syrup
 
1/2/c reisling wine
1/2 c maple syrup or br. sugar
1 lemon juice and zest
1 whole star anise
1/2 cinnamon stick
1 tp vanilla
pinch salt
4 lg cooking apples, peeled ,cored, cut in wedges

Instructions
Add the sugar to the milk.Gently heat to boddy temp. or 100 degrees and add the vanilla. Let heat on the lowest setting for 5 min. Sprinkle the yeast and mix in.Let stand 10 min. In a small pan melt butter and set aside.
Seperate eggs. Put yolks in the milk and gently whisk. Incorporate flour and salt into wet ingredients. Add melted butter to the batter. Beat egg whites till stiff. Fold gently into batter. Leave at room temp for 1 hour till double. Preheat waffle iron to 375. poon 4 to 5 oz of batter each slot. Smooth with the back of spoon.Cook approx 5 min till golden.
Apples- Choose firn apples like honeycrip russet or jonagold. In large pan bring sauce ingredients to boil reduce to immer and add apples. Cook for 10 min till tender.
Take apples from sauce. cool to room temp. Place on top of waffles along with whipped cream and fresh berries. Serve with the syrup
