     Cheesy Baked Jacket Potatoes

Ingredients
12 medium or large potatoes
olive oil
sea salt or regular salt
1 cup vegetarian cheddar cheese, grated
1 cup vegetarian gouda cheese, grated
dried herbs like oregano and parsley
fleur de sel or regular salt
paprika flakes (optional)
 

Instructions
Scrub and clean the potatoes well (placing them in a hot tub of water helps to get rid of the dirt and grime easily). Rub the potatoes generously with olive oil and salt. don’t skimp with the salt here. Bake in a hot oven at 400F for 45 to 60 minutes, until done. Allow to cool. In a bowl, mix the cheese, herbs and a little salt if required. With the help of a knife, slit open the potatoes in the center and stuff them with the prepared cheese mixture. Bake the potatoes in a hot oven at 400F until the cheese melts and is a little browned. Serve hot with soup, salad and bread.
