     Grandma Neilly's Pork Roast

Ingredients
4 lb center cut pork roast
2 Tablespoons garlic
2 Tablespoons flour
salt & pepper to taste
4 Tablespoons vegetable oil
 

Instructions
Using a covered heavy pot, heat the oil slowly adding the garlic; brown the garlic slowly & turn up the heat to med high.
Season the roast with salt & pepper & add to the hot oil (careful of splashing). Brown the roast on every side, then turn down the heat, cover and cook for 3 hours on low (or can be transferred to crockpot for 3-5 hours) on low
Put the roast on a cutting board, tent with foil & put the juices in a pan on the stovetop. Take 2 cups of hot water and mix with the flour well. Bring pan juices to a boil & slowly add the flour water stirring all the while until thick.
Carve roast & add to pan gravy. Note- Make with Bohlman Dumplings from Agnes Rudock!
