     Canning Sweet Onion Relish

Ingredients
5 lbs sweet onions, chopped about 10 cups
2 1/4 c distilled white vinegar
1 c sugar
2 T celery seeds
2 T salt
 

Instructions
Combine all the ingredients in a heavy 8 quart saucepan. bring to a boil. Reduce the heat and simmer for 10 minutes, stirring occasionally. Ladle the relish into clean jars. Leaving 1/2 inch headspace. Cap and seal
Process for 10 minutes in a boiling water canner.
Serving Suggestions
Adds zest to any meat
