Combine all the ingredients in a heavy 10 quart saucepan. Mix well and bring to a boil. Reduce the heat.
Simmer, uncovered for approximately 20 to 30 minutes, stirring frequently and being careful not to burn.
Ladle the hot relish into clean pint jars, leaving 1/2 headspace. Cap and seal.
Process in a boiling water bath for 20 minutes.
You may use a food processor to chop the fruit and vegetables in batches, pulsing the motor.
