Preheat oven to 350F. Spray 3 large baking sheets with non-stick cooking spray. In small bowl, whisk flour, cinnamon, baking soda and salt.
In large bowl, bean vegan margarine, brown sugar, and granulated sugar until smooth and fluffy. Beat in soy milk and vanilla (it will look curdled, that's okay). Beat in flour mixture. Stir in oats, raisins and walnuts.
Drop dough by heaping tablespoons onto prepared baking sheets, 2 inches apart. Bake one sheet at a time until cookies look dry and are browned on the edges, 13 to 15 minutes. Let stand on baking sheet 1 minute before removing with wide spatula to wire rack to cool completely.
