     Slow Roasted Lamb Rack

Ingredients
Lamb rack - allow 2/3 cutlets per person
Vegetables to serve
 

Instructions
1. Preheat oven to 60C.
2. Clean lamb so no meat is on the bones.
3.Place lamb in the oven on a tray with a rack, and cook for an hour.
4. Pan-fry lamb rack to seal the outside of the meat. Turn the oven up to 180C and cook lamb rack for a further 10 minutes (20 minutes for well-done).
