Toast your bread.
Take your goat cheese and squish it with a fork, mix it with olive
oil, oregano and balsamic vinegar.
Spread the goat cheese mix on one of the slice of bread. Add
pine nuts on it, the baby tomatoes, the sprouts and the spinach.
Spread olive oil on the second slice of bread and put it on top of
your ingredients.
