     Pea and Ham Soup

Ingredients
50g or 2 oz butter
2 onions, chopped
650g or 1 1/2 lb frozen peas
1 litre or 2 pint chicken stock
225g or 8oz smoked ham, diced
salt and pepper
 

Instructions
1. Melt the butter in a large saucepan and fry the onions without browning for 5 minutes until softened
2. Add peas and cook for 2 minutes, stirring occasionally. Pour in stock, and bring to boil. Cover and simmer for 30 minutes. 3. Remove soup from heat, pour into a food processor or liquidizer and blend until smooth. Add half the ham and blend until smooth again.
4. Return to pan. Season to taste and stir in remaining ham. Bring to boil, cover and simmer for a further 10 minutes Serve.
