     Southwestern Breakfast casserole

Ingredients
1 ( 8 1/2 oz) muffin mix- prepared
3 c. cubed Italian bread
8 oz Italian sausage
1 c. chopped onion
2 c. milk
1 t. cumin
1/8 t. pepper
10 oz can Ro-tel, undrained
2 c. shredded colby jack cheese, divided
 

Instructions
Prepare muffin mix according to pkg; cool & crumble into a large bowl & stir in bread; set aside. Remove casings from sausage & cook in large skillet with onion over medium heat until browned, stirring to crumble. Drain. combine milk, cumin,pepper, tomatoes, & eggs; stir until blended. Add sausage mixture, stir well. Stir this into bread mixture. spoon 1/2 bread mixture into a 9 x 13 pan coated with Pam. Top with 1 c. cheese. Spoon remaining bread mixture over cheese & then top with remaining cheese. Cover & refrigerate 8 hours. Preheat oven to 350 . Bake 40 min or until set. Let stand 10 min before serving.
