In a 12 inch skillet, over med. heat, cook bacon & onion until bacon is crisp; about 15 min. Pour off some of the drippings. Add shredded potatoes & mix well. Press potato mixture evenly into bottom of skillet. Over medium heat cook potato mixture about 10 minutes.
When underside is browned, flip potato mixture & press back into pan.
Make 6 small holes or wells, leavinga thin layer of potatoes on bottom. Crack one egg into each well. Sprinkle with salt and pepper and cheese. Spreading cheese around eggs.
Cover & cook over low heat for 10 - 15 min or until eggs are set & cheese is melted.
