     Fiesta Cracker Spread

Ingredients
8 oz cream cheese, softened
1 T. seltzer water or milk
1/2 c. finely shredded cheddar cheese
1 t. Mexican seasoning or taco seasoning
1.4 c. sliced green onions
2 T. finely chopped red bell pepper
1 T. salsa
1/4 c. frozen whole kernel corn, thawed (opt.)
1 T. finely chopped jalapeno pepper ( opt)
 
Instructions
In a small mixing bowl, beat cream cheese and water on medioum speed of mixer until fluffy. Add cheddar cheese and seasoning. Beat until combined. Stir in onions, red pepper & and salsa. Fold in corn and jalapenos if desired. Cover and refrigerate at least 1 hour. Garnish as desired and serve with crackers
