     Oatmeal Macaroons

Ingredients
1 1/4 c. flour
1 t. soda
1 c. butter, softened
1 c. brown sugar
2 eggs
1/2 t. almond extract
3 c. Quaker oats
4 oz. ( 1 1/3 c) flaked or shredded coconut
 

Instructions
Heat oven to 350. Grease cookie sheet. In medium bowl, combine flour and soda. In large bowl, beat together butter and sugar until light and fluffy. Blend in eggs and almond extract. Add flour mixture; mix well. Stir in oats and coconut. Drop by rounded t. onto prepared cookie sheet. Bake about 10 minutes or until light golden brown. Cool one minute on cookie sheet; remove to cooling rack.
