Place potatoes in dutch oven & cover with water; bring to a boil. Reduce heat, cover and simmer until tender; drain & place in a mixing bowl. Add sour cream, milk, butter, salt & peppe. Beat on med. low until light and fluffy. Stir in 2 c. cheese, bacon and onion. Transfer to greased 3 qt. baking dish. Top with remining cheese. Bake uncovered at 350 for 30 minutes or until heated through & cheese is melted.
