     Southern-style meatloaf

Ingredients
1 tablespoon vegetable oil
1 large onion, finely chopped
1 celery stalk, finely chopped
1/2 capsicum finely chopped
4 tablespoons tomato sauce / paste
500g lean beef mince
250g lean pork mince
2 tablespoons Worcestershire sauce
2 teaspoons ground coriander
 
1/2 teaspoon Tabasco
2 cups fresh white breadcrumbs
2 eggs lightly beaten
2 tablespoons chopped fresh coriander
2 small fresh red chillies (optional)

Instructions
Heat oven to 180degC. Heat oil in frying pan over medium heat. Add onion, celery and capsicum and cook, stirring until soft.
Mix onion mixture, 1/2 of the tomato sauce and remaining ingredients in large bowl until well-combined. Spread mixture evenly in lightly greased 22cm pie dish. Spread with remaining tomato sauce.
Bake for 30 minutes; if meatloaf looks like it is drying out, cover with foil after 15 minutes.
