     Tomato and feta cheese slice

Ingredients
1 sheet ready-rolled puff pastry, thawed
2 tablespoons olive oil
500g cherry tomatoes
150g feta cheese, crumbled
3 tablespoons shredded fresh basil leaves
30g shaved parmesan cheese
 

Instructions
Heat oven to 200degC. Place pastry on greased baking sheet and fold in edges to make 2cm border; pinch corners together.
Heat oil in frying pain over medium heat. Add tomatoes and sugar and cook, stirring, until tomatoes are shiny, about 2 minutes.
Combine feta cheese and 2 tablespoons basil and spread over pastry base. Top with tomatoes. Bake until pastry is puffed and browned, about 15 minutes.
Before serving, sprinkle with remaining basil and parmesan.
