     Dalesio Sausage Soup

Ingredients
1/2 small onion, sliced into 1/4 inch pieces
6 small sweet Italian sausages (total of 1 1/2 pounds)
14 cups beef or chicken broth
1 cup white rice
2 cups chunky Italian plum tomatoes, fresh or canned
1/4 pounds spinach, cleaned, de-stemmed and torn up
2/3 cup shredded mozzarella
 

Instructions
- Break-up sausages into 1/2 inch pieces and put them in large soup pot along with diced onion. - Saute the sausage and onion over low heat until sausages are golden.
- Add the hot stock and bring to simmer. - Add rice and tomatoes and continue simmering until rice is thoroughly cooked (15-20 minutes). - Add spinach and cook few more minutes. - Add salt and pepper to taste.
- Garnish each bowl of sausage soup with a tablespoon of shredded mozzarella
