Preheat oven to 350 degrees. Cream butter using a mixer
or hand mixer until creamy and very light in color.
Gradually beat in the sugar. Beat in egg yolk, cognac,
almonds, and gradually blend in flour to make a soft
dough. With floured hands shape the dough into one and
one-half inch crescents or any shape you prefer. Put a
whole clove in the center of each. Place on a cookie sheet
and bake in 350 degree oven for fifteen minutes. Cool
slightly and sift confectioners sugar over the cookies.
NOTE- Do not let the cookies turn brown in the oven. They
will be very light in color when they are baked. Also, it is
better to sift the confectioners sugar onto a plate or wax
paper, and then put cookies on to so you will coat the
bottoms in sugar as well.
