     Parmesan Popovers

Ingredients
1/4 cup milk
1/4 cup water
1/4 cup unsalted butter
1/4 tsp salt
1/2 cup flour
2 large eggs
1 cup fresh grated parmesan
Pepper to taste
 

Instructions
Preheat oven to 400 degrees. In a small saucepan, combine milk, water, butter and salt. Bring mixture to boiling over high heat. Reduce heat to medium. Stir in flour all at once and beat mixture with a wooden spoon until it leaves the side of the pan and forms a ball. (I didn’t get any pictures of this because it goes very quickly) Place mixture in a medium bowl. Beat in eggs one at a time, beating well after each addition. Stir in parmesan cheese and pepper to taste. Drop in 8 mounds (or 12 mounds if serving as an appetizer) on a cookie sheet coated with cooking spray. Bake in preheated oven for 20 minutes or until they are puffed and golden. Serve immediately.
