     Vegetable Casserole

Ingredients
1-2 Fresh summer squash
1-2 zucchini
1 eggplant
1 onion
1 package of sliced mushrooms
2 tomatoes
1 cup fat free mozzarella cheese
1/2 bread crumbs
molly mcbutter 1 tspn
 
salt and pepper
1 tbsp of olive oil
1 tsp minced garlic

Instructions
Slice the squash and zucchini. Slice and cube the eggplant, slice the onion, and chop tomatoes.
Saute the vegetables in a pan with a tbsp of olive oil, add the garlic, salt and pepper and molly mcbutter.
Once they are slightly soft, remove from pan and layer in a casserole dish.
Layer, then add a layer of the fat free cheese and breadcrumbs, then do it again. Bake at 350 degrees for 30 minutes.
Serving Suggestions
Makes 6-10 servings depending on how much you want. A meal or a side dish.
