Using a rolling pin, roll out dough on lightly floured surface to form a 11x7 1/2 in rectangle. Put dough in bottom of 5-6 qt roaster. Combine egg yolk & water in small bowl; whisk until blended. Brush over pastry. Set cookwell into heatwell. Cover and bake 12-15 minutes until dough begins to set. Layer apples, and raspberries over dough; sprinkle with sugar and spice.
Cover and bake 30 - 40 min or until apples are tender. Serve hot.
