     Beef Stew Bake

Ingredients
1 ½ Pounds Stew Beef – Cubed
4 Medium Potatoes – Peeled and Quartered
2 Tablespoons Oil
1 10 ½ Ounce Can Mushroom Gravy
1 Cup Tomato Juice
½ Cup Water
½ Envelope (1/4 Cup) Onion Soup Mix
 

Instructions
In a heavy skillet, brown beef cubes in hot oil and drain off excess fat.
Combine gravy, tomato juice, water and soup mix and stir into meat. Cover and simmer for 5 minutes.
Place potatoes in a 2 quart casserole and put meat mixture on top.
Bake (covered) at 350 degrees for 1 1/2 hours or until meat and potatoes are tender. Stir once or twice during the baking process.
